Whole Wheat Chocolate Cupcakes with Dark Chocolate Frosting

Cupcakes are an absolute delight when it comes to satisfying my sweet tooth and I have loved having them for a long time. However, whenever I would get a craving for cupcakes, I would resort to ordering some from bakeries and that stopped during the lockdown. I decided to give them a try at home with a healthier twist and they turned out really well! I made them for my family friend and she loved having each bite! So did we. Since then, I started baking healthy cupcakes on my own at home and have stopped ordering any from bakeries. Finally, we shot a video of this recipe and writing this blog as well to share with you all the detailed instructions to make these fluffy chocolate cupcakes. Here are the ingredients you need for 12 cupcakes:

100gms atta
30gms cocoa powder
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
30ml oil/melted butter.
160gms jaggery powder
2 eggs
1/2 tsp Vanilla essence
50ml buttermilk (milk + lime juice)
METHOD:
1. Keep the tray ready by brushing each cavity with oil and using cupcake liners.
2. For the buttermilk to be used in the recipe, take 50ml Milk, add 4-5 drops of lime juice in it and let it sit or 20-25 minutes. This will allow the milk to curdle and form buttermilk, to be used later in the recipe.
3. In a large bowl, add 2 eggs, jaggery powder, oil, vanilla essence and whisk really well.
4. Sift the wheat flour, cocoa powder, baking powder, soda, salt twice and add to the liquid mix
5. While mixing both of them, add the buttermilk in parts and fold it in.
6. Do not overmix at this stage as it will result in denser cupcakes. Mix till you do not see any flour pockets.
7. Now, drop the batter in separate cupcake liners and fill only 60% of each liner.
8. Bake at 180 degrees for 20-22 minutes till the cupcakes are ready!
9. Let the cupcakes cool down while you prepare the frosting
FROSTING:
For a stable cupcake frosting which can be piped easily, we have used Tropolite whipping cream with chocolate. They held their shape for 2-3 days and tasted delicious! This is how you can make it too:
1. Mix 50gms whipped cream with 200gms melted dark chocolate.
2. Freeze this for 30-35 minutes and then, blend it till you get stiff peaks. This ensures that the frosting holds shape when piped on cupcakes.
3. Drop this mix in a piping bag and using your hands, take out all the air bubbles from it.
4. Pipe them on cupcakes and decorate as per your liking!
