Vegan Pancake Crumble – The story of Akila Subramanian

A seasoned cook, mother, inquisitive traveler and enthusiastic learner, Akila believes in keeping food healthy, simple and nutritious. Having experimented with both baking and cooking over the years, she has developed and perfected homemade healthy recipes that she shares with the world through her page, ‘Morphy and Me’.  A mother of three who is determined to serve only healthy food to her children, she attempts on striking a balance between taste as well as health. She has travelled to numerous places in India, with family as well as solo, with the idea of exploring cultures, meeting new people, garnering stories and creating experiences. We arrived later than the promised time to her place on the day of the video shoot, owing to Bengaluru traffic. But, it was a relief to see that she was prepared for baking the dish as soon as we arrived. Her children were supposed to be picked up from school and hence we started the shoot immediately to avoid delay. But, even in the midst of a time crunch, we had a lovely chat on her travel diaries, childhood, when she and her husband met the Dalai Lama. It was truly fascinating to see the gleam in her eyes with the narration of each story. Much like any explorer, her fridge was adorned with magnets of the places she had visited and we are sure there are many more magnets to come!

Akila tries to document her everyday cooking through a series on her page called ‘Aaj ka Dabba’ where she lays the beautiful Thalis prepared for her family’s daily meals. This sure gives ideas to many women who think ‘What do we cook today?’  and trust me, that is a struggle! Keeping the healthy baking philosophy in mind, Akila demonstrates to us her recipe of a Vegan Pancake Crumble – a super healthy bake, loaded with goodness and tastes delicious! Let us learn how you can make this at home:

INGREDIENTS:

Pancake base :

2 bananas

1 cup whole wheat flour

1/2 cup grated coconut

1/2 cup coconut sugar

1/2 cup coconut milk

1 tbsp oil

3/4 tsp baking powder

Crumble :

1/2 cup oats

1/2 cup powdered almonds

1/4 cup coconut sugar

1/4 cup grated coconut

Sliced strawberries

METHOD:

  1. In a mixer, grate the coconut, bananas, sugar and coconut Milk.
  2. To this liquid, add Oil and mix again.
  3. Take this liquid in a bowl and add the wheat flour to it. Whisk well and add coconut milk if needed, for the consistency.
  4. Roast the oats slightly and then add them to a separate bowl
  5. To this bowl, add the rest of the shaved coconut, sugar and give it a mix.
  6. Add the Liquid batter to a lined baking tray and tap on the counter.
  7. Spread the crumb evenly on this and add the sliced strawberries on top.
  8. Bake in a preheated oven for 30-35 minutes at 180 degrees.
