Eggless Upside Down Pineapple Cake – The story of Shweta Prasad Tandon

Hailing from Patna, Bihar and settled in Bengaluru, Shweta is a mother, entrepreneur and healthy baker. Her venture, ‘Healthy Tokri’ caters to the needs of clients who are looking for celebration cakes, tea cakes or healthy bakes and tries to convert the regular orders into healthy orders as well! Shweta is an enthusiastic learner when it comes to the culinary space as she innovates a lot in her cooking style as well. She makes an attempt to integrate healthy elements in her family’s daily diet, hence the delicacies that are fried traditionally would be baked, white sugars would be replaced with jaggery, coconut sugar or otherwise and Maida or APF is a strict no-no in the house.

Carrying forward this philosophy in her business, she tries to make her orders visually appealing as well as healthy for the consumer. ‘You have to sieve healthy flours such as wheat, millet flours at least three to four times before using them in your bakes’, says Shweta during the video shoot on our Youtube channel. Her little son and husband are foodies who love being the guinea pig to her food experiments and give her constructive feedback on the same. We arrived tired from a separate video shoot at her place on a fine evening and it was a delight to see that she had meticulously kept all the ingredients ready so that we can get a headstart on the video making process.  It was a simple, healthy delight that we enjoyed filming and would love to share the recipe with you guys. Let us learn how to make a healthy Upside Down Pineapple Cake at home:

INGREDIENTS:

1.5 Cup Whole Wheat Flour

1/2 Cup Oil

1.5 tsp baking powder

1 Cup Jaggery

1 Cup Curd

1.5 tsp baking soda

1 tsp pineapple essence

2-3 tbsp milk

1/4 tsp Salt

METHOD:

  1. Seive the flour, baking powder and salt at least 3-4 times.
  2. Mix the curd, jaggery, baking soda and set aside for 4-5 minutes till small bubbles start appearing on the mixture.
  3. Add Oil, Milk, Vanilla Essence to this and mix well.
  4. Combine the dry and wet ingredients. Mix well to get a consistent batter.
  5. Arrange the pineapples on the baking tray as shown in the video.
  6. Pour the batter on top and bake in a preheated oven for 30 minutes.
