Iyengar bakery style Honey Cake – Healthy version

Healthy honey cake

Eating at Iyengar Bakery which is strewn all across Bangalore is a compulsory experience for all of Bangaloreans. They are particularly famous for their honey cake. If you have ever tasted the honey or have been a regular consumer of it (like us, guilty as charged) then you know what we are speaking of. That dish is an experience in itself. The soft spongy cake soaked in honey and garnished with coconut shavings and cream.

We got in touch with home baker Vidya Arvind from Happy homebaker who makes this exact honey cake except her version is healthier. Hence, less guilt which binging! While the traditional honey cakes consists of maida, refined sugar and unprocessed honey, Vidya’s version replaces these with healthier substitutes. Her honey cake uses whole wheat, jaggery and unprocessed honey. Personally we did not feel it was any different from the honey cake that you would buy off a street. Vidya’s was the delectable version with swiss meringue buttercream frosting which was light as air. The chilled frosting on the honey cake elevated its taste from a simple cake to a relish at a bakery.

Her 10 year old son, Advait, helped her in the process of making the cake, with enthusiasm and excitement. He could not wait to have a piece and was inquisitive enough to keep asking Vidya about the ingredients and its measurements.

Want to know how to bake this delicious, light, airy and healthy cake at home? Read on for the recipe:

INGREDIENTS

1 Cup Whole Wheat Flour

2 tbsp Corn Flour

4 Separated Eggs

A pinch of cream of Tartar

1/4 Cup Jaggery

30 ml Milk+ 1bsp if needed

45 ml Oil

2 tsp Vanilla Essence

METHOD:

1. Sift the flours at least 4-5 times

2. Whisk the egg yolks, add in oil as well as milk to this and mix well.

3. Add 3tbsp Jaggery slowly and whisk well.

4. Beat Egg Whites with 1/4 Cup Jaggery until stiff peaks are formed.

5. Slowly fold in the egg whites into the yolk mixture.

6. Pour this in a lined baking tray and bake in a preheated oven for 1 hour at 160 degrees. Decorate the cake as per your liking and enjoy with friends or family!
