Homemade Chocolates with THANDAI – The story of Anwesha Sen Roy

A Bengali hailing from Kolkata, Anwesha is a person who loves to cook, bake and experiment with her culinary skills on a daily basis. She is an advocate who practiced in Kolkata but on shifting to Bengaluru, she gave her passion of cooking a chance to grow more. This led to starting of her delivery service, Mimi’s Kitchen’ from home which caters to cravings of people for homemade food such as Rolls, Fried Rice, Egg Devil, home made chocolates, variety of snacks and much more. You will be surprised to see the variety of dishes she makes in a single day, belonging to different cuisines. Nevertheless, she manages all of it with finesse and a big smile on her face, which makes her passion and love for food evident.

Anwesha specializes in homemade chocolates, adding her own touch to each variety that she makes such as Nolen Gur chocolate, Mango Chocolates, and much more. Her husband, Indrajit is also a foodie who loves venturing into new cuisines or dishes to expand his palette. This motivates Anwesha to try innovative dishes. She also participates in healthy baking drives, takes up cake orders, food orders and hopes for her venture ‘Mimi’s Kitchen’ to grow further.

Keeping her love for chocolate making in mind, she showed us her Holi special recipe of Thandai Chocolates! This is the first time we covered a chocolate recipe for our Youtube channel and it was, in fact, delicious as well as fascinating to watch. Integration of the flavor of Holi with chocolates truly made the festival more colourful. Let us learn how to make these at home:

INGREDIENTS(Makes 15 chocolates in the mould we used):

White Chocolate- 100gms

Black Pepper 7-8

Cashews-3

Almonds-3

Cardamom- 4-5

Poppy Seeds or Posto- 1/4 tsp

Melon Seeds- 1/4tsp

Fennel- 1/4 tsp

Rose Petals- 1/4 tsp

Saffron- 5-6 strands(OPTIONAL)

Rose essence- 1/2 drop(OPTIONAL)

Color- 1 drop (OPTIONAL)

For garnishing- Almond, Pista, Rosepetals and Homemade Thandai!

METHOD:

  1. Make a powder with the black pepper, poppy seeds, melon seeds, fennel, cardamom and rose petals.
  2. Melt the white chocolate carefully in a microwave first for 30 seconds. If it is not done, check and melt for another 30 seconds.
  3. Mix a crushed form of Pista,almond and cashews in the melted white chocolate along with the powder made.
  4. Make a liquid mix by stirring these well in a bowl.
  5. Add color(Optional).
  6. Mix well and drop it in the moulds as shown.
  7. Tap the mould on the table to get rid of the air bubbles.
  8. Refrigerate for 25-30 minutes until done.
  9. Serve with Thandai and decorate it as per your liking!

Thandai INGREDIENTS:

Milk – 500ml (Slim Milk is used here)

Powdered Sugar Saffron 10-15 strands

Thandai Powder 5-6 tbsp (Don’t use saffron here)

METHOD:

1. Boil the milk and add sugar, thandai powder, saffron.

  1. Boil for another 15-20 minutes or until it becomes thick
  2. Switch off the flame and leave it for cooling.
  3. Strain and keep in the fridge.
  4. Serve Chilled!
