Healthy baking is currently a rage as it can provide you with indulgent desserts and make you feel less guilty for consuming those! Replacing Maida/APF, processed sugars and artificial colors in your baking can surely have a positive change in your health. One should consider this shift or change if they want to consume desserts guilt free. We are here with yet another healthy baking recipe of blondies today. These blondies or ‘blonde brownies’ are made with whole wheat and sugar free peanut butter, needless to mention that they taste absolutely decadent! They are brownies without the cocoa powder or chocolate, you can say. Soft dessert bars for a quick dessert fix is what makes blondies a treat for people with sweet tooth.

These blondies are made by the founder of Ovenderful Mom Bakers Community, Simran Oberoi Multani. We had shot another healthy crackers recipe video with her as well, which you can read for more insight on her story from the kitchen. We had never tasted blondies before this, so the excitement for having them was certainly one of the reasons why the shoot had gone really well. Simran was kind enough to show us this recipe, in spite of having a tight schedule of picking up her daughter from school and helping her son with exams. The best part? She packed the rest of the baked goodies for us and half of them got over on the way! Yes! That’s how good the blondies tasted.

Simran oberoi Multani

These are the ingredients you need to make 10-12 blondies:
1/4 cup melted butter
3/4 cup Peanut Butter
3 eggs
1 1/2 cup brown sugar
1 tsp vanilla extract
1 cup whole wheat flour(Atta)

Method –
1.Beat both the butters together so that they mix well.
2.Add the eggs and beat until light and fluffy.
3.Add the extract and mix well.
4.Then add the brown sugar which has been powdered, in two parts and beat thoroughly.
5.Finally fold the whole wheat flour into this batter, spoon it into a greased baking pan and smoothen the top.
6.Add cranberries on top.(optional)
7.Bake in a pre-heated oven for 20-25 minutes, at 175 degrees C.
8.Slice and serve.

These are indulgent blondies that you can’t stop having, we guarantee you that! You can add any other berries instead of cranberries for the final garnish as well. They go best with tea or coffee and are definitely worth a try!
