Gluten Free Chocolate Cake – The story of Renuka Verma

One might think that healthy baking means simple replacing ingredients. Like replacing maida with whole wheat flour or using brown sugar instead of white. But, the idea of healthy baking runs a bit deeper than these plastic changes. It is not just what you out in your bakes but also creating new recipes which are centred on healthy products. So it is not just product replacement but also newly created products.

Home baker and entrepreneur, Renuka Verma, has been integrating this practice of creating new recipes using healthy flours and ingredients. She has given herself the goal of creating a healthy baked product on a daily basis. So her daily goal is to be create a new baked product or re-invent a baked classic using healthy baking ingredients. She has a collection of flours and sugars that we may not even have heard of. Adding to the same, she is an expert when it comes to baking healthy breads from scratch at home and sells them too, through her venture ‘Poushtik Bakes’. Having baked over 100 bread loafs of different varieties such as gluten free, sourdough, pizza bases, buns and more, Renuka has a waiting list whenever she conducts online baking workshops! Excited to try her bakes, we asked her what was in store for us. We were pleasantly surprised to hear that we would be getting a chocolate cake.

This was not just any other chocolate cake but has red rice flour as its base, along with carrots. These two ingredients form the base of the cake and we were intrigued by the idea of using vegetables along with flours to retain moistness of the cake. We were once again surprised to find that the finished cake didn’t have any flavour or taste of carrot. It simply highlighted the rich texture and the taste of chocolate. So here was a learning for us sometimes when ingredients are added they add as a flavour supported like coffee in chocolate cake, carrot played a similar role. Needless to say we were really happy when Renuka packed the remaining cake for us and said please take this home. We gladly accepted because we never say no to chocolate! Let us learn to make this gluten free bake at home:

Ingredients:

3/4 Cup Red Rice Flour

1/2 Cup Coconut Sugar

1/4 Cup + 1 tbsp. Cocoa Powder

1 tbsp. Flax Seed Powder

1/4 Cup + 1 tbsp. Almond Meal

1 tsp. baking Powder

1/8 tsp. baking soda

1/8 tsp salt

1 Cup grated carrots

3/4 Cup milk

2 tbsp Liquid Jaggery

METHOD:

  1. Seive the dry ingredients except carrots and grind them in a mixer.
  2. Add the wet ingredients and mix well.
  3. Add the grated carrots to this and mix to get a good consistency
  4. Pour this in a baking tray and bake for 35-40 Minutes at 180 degrees.
  5. Garnish with ingredients of your choice and serve hot.
