Gluten Free & Vegan Banoffee Cake – The story of Kasturi Neil Sonalkar

A doctor, baker, entrepreneur and mother, Kasturi is the baker we met during our journey who probably bakes the healthiest of goodies! Creativity could be her middle name as she develops unique recipes at home with the simplest of ingredients and turns them even more desirable. This has led to the establishment of a fanbase and strong brand name in Mumbai for her called, Bakeology, created 4 years back. A purely healthy baking venture, Bakeology has helped to spread the word about making healthy bakes among the people of Mumbai effectively. Making cakes healthy, vegan, gluten free or bringing healthier changes to your daily diet are a few things you can learn from Kasturi’s culinary style. Recently, she baked French fries, instead of deep frying them the traditional way and it was a hit!

It all started when she wanted to save her daughter from the junk food sold outside, whether it be in food or desserts. It was the initial reason for her to look towards healthier options of giving food to her child and satisfy her cravings at the same time. Kasturi’s little one, Zoey, enjoys these healthy treats and experiments by her mother thoroughly, we have been told! She was treated to homemade Bourbon biscuits recently, free of refined flour and sugar and now she can’t stop asking for more. This certainly motivates Kasturi to push her boundaries further and truly innovate the arena of healthy baking.

‘Refined Flour free, sugar free, oil free, cream free, dairy free bakes can look, taste and feel as good as or even better than your regular bakes’, she says during the video shoot of our Youtube channel. She shows us the recipe of her Gluten Free, Vegan Banoffee Cake, a three layered delight, which was a delight to consume! Let us learn how to make this at home:


1.5 Cups Mix of Gluten Free Flours ( Ragi, Jowar, Brownrice, Buckwheat, Tapioca)

1 Cup Powdered Khandsari Sugar or Jaggery

1 tsp Baking Soda

1 tsp Cinnamon

1 Cup Almond Milk

2 tbsp Vinegar

1/2 Cup Cold Pressed Coconut Oil

1 tsp Vanilla Extract

Chocolate Ganache

3-4 Bananas


  1. Take a bowl, add the flour mix and cinnamon powder in it. Give it a whisk.
  2. Take another bowl, add the wet ingredients and mix well.
  3. Combine the dry and wet ingredients to a consistent mix.
  4. Add the chopped Bananas in the mix.
  5. Line 3 separate trays and pour the mix in them evenly.
  6. Bake at 180 degrees for 40-45 Minutes.
  7. Layer the cakes with chocolate ganache, top with bananas and sticky toffee sauce.
  8. Serve hot or chilled!
