Eggless Apple Carrot Muffins – The story of Uma Adoni

Uma pursued baking as a hobby since childhood days and when she moved to Bangalore, this hobby became a passion. She started experimenting with unique flavors, flours, ingredients in baking to make it healthy for her kids and also learn at the same time. After completion of an entrepreneurial course in baking, Uma was definite that she wants to take this passion a step further. She is a healthy mom baker who wants to give her sons only the best when it comes to desserts or savory bakes so that they don’t consume junk food from stores. Be it healthy homemade pizzas, cakes, breads, baked snacks, Uma has done it all and wishes to explore further in this area. We met her through social media and visited her place on a beautiful afternoon for the video shoot. She had meticulously arranged all the ingredients before the shoot and also kept a special juice ready for us. With this refreshing and healthy drink, we started shooting her recipe of Eggless Apple Carrot Muffins. These are tea time healthy muffins which are not very sweet and can be enjoyed as a light dessert too.

We chatted with Uma more on how she wants to start selling baked goodies later too. And, we were certain that people would love ordering from her as the muffins smelled, looked and tasted amazing. Let us learn how to make these?

Baking ingredients

Wheat Flour 1 Cup
Semolina 1/4 Cup
Cane Sugar 3/4 Cup
Grated Carrot 1/2 Cup
Grated Apple 1/2 Cup
Curd 1/2 Cup
Olive Oil 1/4 Cup
Baking Powder 1 tbsp
Baking Soda 1/2 tbsp
Salt a pinch
Nuts 1/4 cup
Vanilla Essence 1 tbsp
Nutmeg powder 1/4 tbsp
Milk if needed


1. Seive Wheat Flour, semolina, twice.
2. In a large bowl, add curd, oil, sugar and blend.
3. Add Baking Powder, Baking Soda, Salt and whisk till it becomes frothy.
4. Mix seived flour in the mixture, add grated apple and carrot.
5. Add Vanilla essence, nutmeg powder, chopped nuts to this mixture and mix gently.
6. If consistency is required, you can add milk at this stage.
7. Grease and line a muffin tray, pour the mix in cupcake moulds.
8. Preheat oven at 180 degree celsius and bake for 15-18 minutes.
