Designer Cake Pops – The story of Sanjukta Panja

Baking was never a part of Sanjukta’s plan, but when she shifted to Bangalore, she was taken in by the rising wave of baking. She is a full time IT Professional, a mother, and a professional homebaker. Managing  a million things in a day is a mother’s everyday job and Sanjukta does all of that very efficiently. A Bengali whose family loves eating, her mother cooks at times or even when her in laws visit, they make the complicated Bengali dishes that everyone feasts on.

‘I frost the cakes at night and keep them in the fridge after coming back from office, when my son is sleeping’, says Sanjukta. Her friend, Varsha GV, stays next door, who is her partner in the homebaking business, Chow Chow Pandas. Varsha does the cake decoration, making fondants, while Sanjukta bakes the cakes, layers and frosts them! It’s a two women army that has kept the venture running. They make lovely designer cakes, popsicles, celebration cakes, cake pops and more!

Not only baking the cakes, Sanjukta also has a good eye when it comes to clicking photographs of the finished bakes. She is a curious photographer who tries to get better at her hobby with each click. Her son is a mischievous 5 year old who keeps everyone at home, on their toes! It was a delight meeting him and listening to his stories!

We visited homebaker, Sanjukta’s place, on a weekday for a video shoot, which was meant to be a Christmas special bake. Hence, she showed us her recipe of Christmas Designer Cake Pops. Let us learn how to make them today.

Ingredients to make Cake Pop-

• Chocolate/Vanilla cake.

 • Ganache- 2part Dark Chocolate : 1 Part Amul Fresh Cream .

• Crumble cake into Ganach

• Mix. • Roll into balls.

• Dip in DarkChocolate.

 • EAT!

Process:

1. Crumble the cake into the bowl, Make sure there are no large lumps.

2. Mix the cake crumbles with Ganach until combined.

3. Measure 1 Tablespoon of moist cake mixture and roll into a ball. Place balls on a lined baking sheet. Refrigerate for 5 minutes.

4. Re-roll the chilled balls to smooth out, if needed.

5. Melt Dark Chocolate in double boiler or microwave.

6. Dip a lollipop stick about 1/2 inch into the melted chocolate and then insert into the center of the cake ball.

7. Only push it about halfway through the cake ball. And keep it back to Freezer for 5 mins.

8. Dip the cake ball into the melted chocolate and coat until it is completely covered.

9. Make sure the coating covers the base of the cake ball where it meets the lollipop stick. Very gently tap the stick against the edge of the measuring cup to allow excess coating to drop off.

10. Decorate the top with sprinkles

11. Coating will set within 5mins.

12. Store cake pops in the refrigerator for up to 1 week.
