Choley Puri- a quintessential Indian delicacy!
Choley Puri is a popular Indian homemade delicacy that many love to relish on cheat days or weekends! It is packed with Desi flavors, made with love and is very filling- calls for a complete lunch or dinner! In our recent video shoot, a talented homechef in Bengaluru- Simran Kukreja – shows us this recipe from scratch and we didn’t mind the extra helpings of Poori, because it tasted delicious! Simran belongs to Namma Bengaluru, she is in the teaching profession since 15+ years and holds an immense passion for cooking, as well as baking. The secret ingredient in all her creations is that extra drizzle of love- which makes you wanting for more servings! Let us see how to make her version of the quintessential choley puri:
Ingredients for Chola –
Servings – 6:
3 cups of soaked overnight chickpeas
4 onions chopped finely
5 medium sized tomatoes
5 pcs garlic
1/2 inch ginger
4 to 5 green chillies
Salt as per taste
1 tsp cumin
1 tbsp red chilli powder
1 tbsp dhania or coriander
1/2 spoon haldi or turmeric powder
1/4 tsp jeera powder
Everest channa masala 2 tsp
Garam masala 1/2 tsp
For Poori dough:
2 cups all purpose flour
Salt as per taste
3 medium sized boiled potatoes mashed well,
4 to 5 tbsp oil for kneading the dough
Water as required for kneading.
To prepare the chola
Soak chickpeas overnight for 8 hrs,Then put a pressure cooker on high flame & Add the chickpeas in it along with salt & water,cook the chickpeas according to your cooker for 15 min approx.
Meanwhile, put a pan on medium flame & heat a little oil in it.
Saute the onions on simmer flame until onion turns golden brown,then add
Red chilli powder,haldi, dhania mash well with the masalas then add the combined ginger garlic green chillies paste along with Tomato puree.
Cook the tomato onion mixture for 2 mints & then add cooked chola with little water.
Stir well to mix the masala with the chola and pressure cook for 2 more whistles with 3 medium sized potatoes,Check the salt & allow it to cook for few mints,You can garnish with garam masala fre drops of lemon & corriander.
The Chola is ready to be served!
Prepare the dough
Now for making the bhaturas/Poorism combine together the boiled potatoes salt oil and some water to the all purpose flour to make a dough in a plate. Keep aside for half an hour to ferment.
Now put a kadhai on high flame & meanwhile take equal quantities of the dough and roll medium size puris (bhaturas) when the oil is hot enough carefully add the bhaturas to the oil & deep fry.Repeat with the rest of the dough.
To make the bhaturas soft you can add some ghee, this will make your bhaturas delicious.
You can add some aamchur powder to the chole or lemon to give a spicy and tangy flavor.
