
15 Minute Baked Sweet Potato Salad
We had visited the home of Lakshmi Tauro, an artist, homemaker and a phenomenal cook who showed us two of her classic recipes, that she had developed over the years through experiments and passion. The first one, was Ying Yang Chicken Lollilops, a fusion twist on the regular deep fried lollipops, available in the market. The recipe of the same, you will find in a separate blog. The second recipe Lakshmi demonstrated was a quick, healthy, baked sweet potato salad. We absolutely loved this salad and could not stop asking for more helpings ! We tried this at home a couple of times as well and it is definitely worth making again and again! Here is how you can make this from the comfort of your home:
Ingredients:
2 Cups Cubed Sweet Potato
1 tsp crushed black pepper
1 tbsp Olive Oil
1 tsp Chilli Flakes
1 tbsp Balsamic vinegar
Coriander to garnish
1 tbsp minced garlic
1 tbsp Minced Onion
Salt to taste
METHOD:
- Take the sweet potatoes in a bowl.
- Add the garlic, pepper, Olive Oil, Chilli Flakes and mix well.
- Microwave in high heat for 4+4 minutes.
- Add Balsamic Vinegar , onions and mix well.
- Garnish with coriander and refrigerate for 25-30 minutes.
- Serve Cold!
